TIPS: Ever wondered how to tell if an avocado is perfectly ripe? Simply give it a gentle press near the stalk. If the fruit is slightly dented, it’s good to go. However, if it feels too soft, it might be overripe.

Next, grab a medium-sized bowl and lightly beat the eggs with a whisk.

Now, it’s time to prepare the chicken fillets. Cut each fillet in half lengthwise. Then, using a kitchen hummer, pound the fillet halves through cling film until they’re about 1/2 cm thick.
TIPS: Looking to tenderize your meat but don’t have a kitchen hammer? No worries! There are plenty of alternatives that can get the job done just as effectively. You can grab a heavy and thick knife, a glass bottle, a rolling pin, or even a masher. However, if you want something easier and more convenient, a special meat softener, also known as a tenderizer, is your best bet.
TIPS: Why bother with cling film when beating meat, you ask? Well, cling film actually serves a purpose beyond just keeping your leftovers fresh. It helps prevent any unwanted kitchen contamination. But if you don’t have cling film on hand, don’t fret! A regular plastic bag can do the trick just as well.
STEP 4
Place the prepared fillets in another medium-sized bowl and season them with salt, black pepper, and dried garlic.

- Avocado – 1 pc. (250 g)
- Grated cheese – 1/2 cup (50 g)

- Chicken breast fillet – 2 pcs. (700 g)
- Flour – 1/2 cup (80 g)
- Eggs – 2 pcs. (100 g)
- Dried garlic – 2/3 tsp. (2 g)
- Ground black pepper – 2/3 tsp. (2 g)
- Salt – 1/2 tsp. (3 g)
for the mustard sauce
- Dijon mustard – 1 tbsp. (16 g)
- Vegetable oil – 1 tbsp. (14 g)
- Lemon juice – 1 tsp. (5 g)

Cooking steps:
- Cut the ripe avocado in half, remove the pit, and cut into thick slices.
Chicken fried chicken
- Place eggs in a medium bowl and beat lightly with a whisk.
- Cut each chicken breast fillet in half lengthwise. Beat each half of the fillet with a meat hummer to a thickness of 1/2 cm. Season the fillet with salt, black pepper and dry garlic.
- Dredge each chicken fillet half first in flour, then dip in the egg mixture, then roll in flour again.
- In a well-heated frying pan in vegetable oil, fry the chicken fillet on both sides.
Mustard sauce
- Place mustard in a small bowl, add vegetable oil and lemon juice, stir.
Assembly
- Place the chicken fillet in a single layer in a baking sheet pre-greased with vegetable oil. Brush with mustard sauce, then place avocado slices on top and sprinkle with grated cheese.
- Bake in an oven preheated to 180°C (350⁰F) for 5-10 minutes.
- Serve the finished dish hot, garnish with chopped parsley leaves.
