how to cook Moist Cherry Apricot Cake?

Абрикосовый кекс

To start, preheat your oven to 175°C (350⁰F). Give those apricots a good wash, then cut them in half lengthwise and remove the pits.

TIPS: When it comes to baking, it’s best to use firm varieties of apricots or slightly underripe fruits. This way, they will maintain their shape and texture in your finished baked goods. Alternatively, canned apricots can also work well in this recipe.

Now, grab a large bowl and plop in the softened butter. Use a mixer on medium speed to beat it until it’s nice and creamy. Add in the sugar and keep beating until it’s all mixed together.

TIPS: If your butter is too hard, a few seconds in the microwave can soften it up and make it easier to whip.
