To start, preheat the oven to 175°C (350⁰F). Give the plums a good wash, then cut them in half lengthwise, remove the pits, and slice each half thinly.
TIPS: If you don’t have fresh plums on hand, frozen ones can be a great substitute.

Next, grab a bowl and place the egg yolks in it. Add some vanilla sugar, ground ginger, and lemon zest. Mix everything together well using a mixer.

- Ground ginger – 1/2 tsp. (1 g)
- Vanilla sugar – 1 sachet (10 g)
- Melted butter – 3 tbsp. (42 g)
for the syrup
- Grape juice – 4 tbsp. (60 g)
- Sugar – 1/2 cup (100 g)
Cooking steps:
- Wash the plums, cut them in half lengthwise, remove the pits, and slice each half thinly.
- Place egg yolks in a bowl, add vanilla sugar, ground ginger, add lemon zest, mix well. Pour sugar into the resulting mass, add semolina, stirring thoroughly after each addition.
- Pour milk and melted butter into a saucepan, put on fire, bring to a boil.
- Pour a third of the hot milk into the egg mixture and stir quickly. Pour the resulting mixture back into the saucepan with the remaining milk and place over medium heat. Cook with constant stirring until the mixture thickens, about 4 minutes.
- Pour the dough into a 22cm x 15cm baking dish pre-greased with butter and sprinkled with semolina. Leave to cool for 30 minutes. Place the sliced plums on top of the dough.

- Place sugar into a saucepan, pour in grape juice, put on fire, bring to a boil. Cook until a thick syrup is obtained.
