Next, grease a baking sheet with some vegetable oil and place the zucchini boats on it. Grease them inside with vegetable oil as well.

  • Tomatoes – 2 pcs. (200 g)
  • Boiled eggs – 2 pcs. (100 g)
  • Natural yogurt – 2 tbsp. (30 g)
  • Onion – 1 pc. (130 g)
  • Grated cheese – 1/2 cup (50 g)
  • Vegetable oil – 1 tbsp. (14 g)
  • Salt – 1/3 tsp. (2 g)
  • Water – 1/2 cup (125 g)

Cooking steps:

  1. Cut the zucchini lengthwise into two halves. Remove the core so that you get boats.
  2. Put the zucchini boats on a pre-oiled baking sheet. Grease the boats with vegetable oil. Bake in a preheated oven at 180°C (350°F) for 20 minutes.
  3. Cut onions into quarter rings, tomatoes into cubes, zucchini core into cubes. Chop boiled eggs.
  4. Pour some vegetable oil into a frying pan over high heat. Put chopped onion in it, fry for 2 minutes.
  5. Add zucchini and fry for another 3 minutes, put eggs, tomatoes, salt, mix. Add natural yogurt and grated cheese, mix.
  6. Fill zucchini halves with prepared filling.
  7. In a baking sheet with zucchini, pour 1/2 cup (125 g) water. Bake in a preheated oven at 180°C (350°F) for another 20-25 minutes.
  8. Sprinkle baked zucchini with parsley leaves.
