TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

Ingredients:

  • Baking powder – 2 tsp. (10 g)
  • Salt – 1/3 tsp. (2 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Lemon juice – 1 tsp. (5 g)
  • Lemon zest – 1/2 tsp. (2 g)
  • Softened butter – 1/2 cup (120 g)
  • Frozen blueberry – 3/4 cup (150 g)

for the icing

  • Powdered sugar – 1 cup (200 g)
  • Lemon juice – 3 tbsp. (45 g)

Cooking steps:

  1. Roll slightly thawed blueberries in 2 tbsp. (18 g) of flour.
  2. Beat softened butter, sugar and vanilla sugar with a mixer at medium speed until light and fluffy. Add eggs, lemon juice, lemon zest, baking powder and salt, mix thoroughly.
  3. Pour half the flour into the butter mixture, pour in the milk. Then add the remaining flour, beating with a mixer at low speed until smooth after each addition. Place floured blueberries into the dough and mix gently.
  4. Place the dough in a pre-greased and floured 25cm x 11cm loaf tin.
  5. Bake in a preheated oven at 175°C (350⁰F) for 1 hour. Let the cake cool in the tin for about 10 minutes. Remove from the tin and cool completely on a wire rack.

Icing

  1. Put powdered sugar into a small bowl, add lemon juice, mix thoroughly until smooth.
  2. Pour the icing over the cooled cake and garnish with lemon slices.
