Ingredients:

for the dough

  • Flour – 3 cups (480 g)
  • Milk – 1 3/5 cup (400 g)
  • Salt – 1 tsp. (6 g)
  • Sugar – 1 tbsp. (12 g)
  • Dry instant yeast – 1/2 tbsp. (6 g)
  • Vegetable oil – 2 tbsp. (28 g)

for the filling

  • Potatoes – 3 pcs. (620 g)
  • Cheese – 1/2 pack (100 g)
  • Butter – 1 tbsp. (14 g)
  • Dill – 1/2 bunch (25 g)

additionally

  • Egg yolks
  • Dill
  • Grated cheese

Cooking steps:

Filling

  1. Peel the potatoes, chop coarsely. Pour boiling water, add salt, cook until tender. Drain the water.
  2. Grate the cheese on a coarse grater.
  3. Finely chop the dill.
  4. Place boiled potatoes in a medium bowl and mash with a potato masher. Add butter, stir. Add grated cheese and stir. Add chopped dill and stir. Divide the finished filling into three parts.

Dough

  1. Pour milk into a large bowl, add salt, sugar and dry yeast, mix. Add flour to the resulting milk mixture and mix well. Pour in vegetable oil and stir. Knead the dough for 10 minutes.
  2. Cover the bowl with cling film and leave to rise for 30 minutes in a warm place.

Assembly

  1. Divide the finished dough into three parts. Form a 20cm circle from each part of the dough. Place the potato filling in the center. Pinch the edges with folds to form a ball. Roll out the resulting ball into a 20cm flat cake on a baking sheet with parchment paper. Cover with cling film and leave to rise for 20 minutes. Brush each flat cake with beaten yolk.
  2. Bake in an oven preheated to 180°C (350⁰F) for 25-30 minutes until golden brown. Sprinkle the finished hot flat cake with grated cheese and chopped dill.
