STEP 1

Пасха с творогом и сухофруктами 7

To start, preheat your oven to 175°C (350⁰F). In a medium-sized bowl, combine flour, cornmeal, ground nuts, baking powder, and salt. Give it a good stir to make sure everything is well mixed.

TIPS: If you don’t have ready-made cornmeal, no problem! You can make your own by grinding corn grits (polenta) in a coffee grinder. It’s a simple solution that will save you a trip to the store.

TIPS: Feel free to choose your favorite nuts or peanuts, ensuring they are finely ground. You can grind the nuts in a coffee grinder or kitchen chopper. Alternatively, nut flour like almond flour can be used as a substitute for ground nuts.

STEP 2

Next, take a large bowl and add softened butter. Add sugar to the bowl and beat it with a mixer at medium speed until it becomes creamy and smooth.

TIPS: If your butter is too hard, a few seconds in the microwave can soften it up and make it easier to whip.

TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

STEP 3

Once the dough is ready, it’s time to add some delicious extras. Mix in dried cranberries and chopped walnuts, making sure they are evenly distributed throughout the dough.

TIPS: Don’t limit yourself to dried cranberries; feel free to experiment with other dried fruits of your choice. Raisins, dried apricots, dried cherries, or a mix of dried fruits can all work wonders in adding variety to your Easter cake.

While the cakes are cooling, prepare the icing. In a small bowl, combine powdered sugar and milk. Mix it thoroughly until you have a smooth consistency.

TIPS: When it comes to icing, I’ve got you covered. If it’s too thick for your liking, simply add a little more milk. On the other hand, if it’s too thin, sprinkle in some powdered sugar to thicken it up.

STEP 11

Apply the icing generously to each cake, making sure to cover the entire surface.

TIPS: Now, here’s one more head up about icing. It hardens pretty quickly. So, make sure to use it right away to avoid any clumpy disasters.

TIPS: Last but not least, let’s talk about icing the cakes again. For a picture-perfect finish, it’s best to ice them on a wire rack. This way, any excess icing can gracefully drip off, leaving you with a beautifully decorated treat.
