Easy Italian Easter Cake

Ingredients:

  • Flour – 2 cup (320 g)
  • Baking soda – 1 tsp. (5 g)
  • Baking powder – 1/2 tsp. (3 g)
  • Salt – 1/2 tsp. (3 g)
  • Softened butter – 1/2 cup (120 g)
  • Sugar – 3/4 cup (150 g)
  • Eggs – 4 pcs. (200 g)
  • Drinkable yogurt – 1 cup (250 g)
  • Dried cherries – 2 tbsp. (18 g)
  • Dried cranberries – 2 tbsp. (18 g)
  • Coarsely chopped walnuts – 1/4 cup (30 g)

for the icing

  • Powdered sugar – 1 cup (200 g)
  • Milk – 2 tbsp. (30 g)

additionally

  • White sprinkles
  • Easter eggs

Cooking steps:

  1. Add dried cherries, dried cranberries and chopped walnuts to a small bowl and stir to combine.
  2. Place flour, baking soda, baking powder and salt in a medium bowl and stir to combine.
  3. Put softened butter in a large bowl, add sugar, beat with a mixer at medium speed until creamy. Add eggs one at a time, mixing thoroughly after each addition.
  4. Pour half of the yogurt into the egg-butter mixture in a slow stream, add part of the flour mixture. Then pour in the remaining yogurt, add the remaining flour mixture, mix with a mixer at low speed until smooth. Add a mixture of dried fruits and nuts, mix thoroughly.
  5. Place the dough in a pre-greased and floured 25cm round bundt pan. Level the top with a spatula.
  6. Bake the cake in an oven preheated to 180⁰C (350⁰F) for 45-50 minutes. Leave the finished cake in the pan for 10 minutes. Remove from pan and let cool completely on a wire rack.

Icing

  1. Pour powdered sugar into a small bowl, pour in milk, mix thoroughly until smooth.
  2. Apply the icing to the finished Easter cake, sprinkle with white sprinkles, and decorate with Easter eggs.
