To begin, preheat the oven to 200°C (400⁰F). Take the yeast puff pastry, ensuring it is thawed according to the instructions on the package, and place it on a lightly floured work surface.

Next, roll out each sheet of defrosted dough into a 20cm x 20cm square. For more precise measurements, you can use a ruler.

TIPS: If cracks appear while you’re working with puff pastry, don’t worry! Simply moisten them with a little water and then press down with your fingers to bring the dough back together. Easy peasy!

Using a pizza cutter and ruler, cut the dough into 10 cm -based triangles.

TIPS: To cut your puff pastry, you can use a regular sharp knife or a pizza cutter. Both will do the job just fine.

From one sheet of dough, you will obtain four triangles: three full triangles and one assembled from two halves, resulting in a total of eight pieces.

Make a 1.5 cm long cut in the center of the base of each triangle. This will help with the folding process later on.

Now, it’s time to form the croissants. Fold each triangle and bend it into a crescent shape.

Place the croissants on a baking tray that has been lined with parchment paper.

Cover the baking sheet with cling film and let the croissants rise for 1 hour in a warm, draft-free place. Ideally, the temperature should be around 25°C (77°F).

TIPS: If you don’t have cling film, a clean kitchen towel can be used to cover the dough.

In a small bowl, lightly beat an egg with a whisk. Add water and stir.

Place the tray with the croissants in the preheated to 200°C (400⁰F) oven and immediately reduce the temperature to 175°C (350⁰F). Bake for 10 minutes, then reduce the temperature to 150°C (300⁰F) and bake for another 6 minutes.

Easy Classic French Croissants

Ingredients:

  • Croissant dough (yeast puff pastry) – 1 pack (500 g)

for the icing

  • Powdered sugar – 1/3 cup (63 g)
  • Milk – 1 tbsp. (15 g)

for the chocolate topping

  • Dark chocolate – 1/2 bar (45 g)
  • Butter – 3 tbsp. (42 g)
  • Milk – 1 tbsp. (15 g)
additionally
  • Eggs – 1 pc. (50 g)
  • Water – 1 tsp. (5 g)
  • Almond flakes

Cooking steps:

  1. Place the croissant dough, thawed according to package instructions, on a lightly floured work surface. Roll out each sheet of defrosted dough into a 20cm x 20cm square.
  2. Using a pizza cutter and a ruler, cut the dough into triangles with 10 cm bases. From one sheet of dough, you will get four triangles: three full, one assembled from two halves, 8 pieces in total.
  3. Make a 1.5 cm long cut in the center of the base of each triangle. Form croissants by folding the triangles and bending them into a crescent shape.
  4. Place the croissants on a baking sheet previously lined with parchment paper. Cover the baking sheet with cling film on top and leave to rise for 1 hour in a warm, draft-free place.
  5. Place the egg in a small bowl, lightly beat with a whisk, add water, and stir. Brush the croissants with the resulting egg mixture.
  6. Preheat the oven to 200°C (400⁰F), place the tray with croissants in the oven and immediately reduce the temperature to 175°C (350⁰F). Bake for 10 minutes, then reduce temperature to 150°C (300⁰F) and bake for another 6 minutes. Remove the croissants from the oven and cool slightly.
Chocolate topping
  1. Place the chopped chocolate in a medium bowl, pour in the milk, and add the butter.
  2. Put the bowl over a pan of simmering water, combine the ingredients while stirring constantly, and cool slightly.

Icing

  1. Place powdered sugar into a small bowl, pour in milk, mix thoroughly until smooth.
  2. Pour the finished croissants with chocolate topping and icing, sprinkle with almond flakes.
