Next, take the slightly thawed plum halves and cut them into cubes. Roll these cubes in 1 tablespoon of flour to prevent excess liquid from getting into the dough.

TIPS: Fresh plums can be used instead of frozen ones. In this case you don’t need to coat them in flour.

In a medium bowl, combine the remaining flour, oatmeal, baking powder, salt, and cinnamon. Mix them together well.

In a large bowl, place the softened butter and beat it with a mixer at medium speed. Add the sugar and continue beating until the mixture becomes creamy.

TIPS: If your butter is too hard, a few seconds in the microwave can soften it up and make it easier to whip.

TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

Ingredients:

  • Flour – 1 1/3 cup (215 g)
  • Sugar – 1/2 cup (100 g)
  • Eggs – 2 pcs. (100 g)
  • Yogurt – 1/2 cup (125 g)
  • Milk – 1/2 cup (125 g)
  • Salt – 1/2 tsp. (3 g)
  • Baking powder – 1 1/2 tsp. (8 g)
  • Ground cinnamon – 1 tsp. (2 g)
  • Oatmeal – 1/2 cup (55 g)
  • Softened butter – 1/2 cup (120 g)
  • Frozen plums – 1/2 cup (100 g)
  • Plums – 4 pcs. (185 g)

Cooking steps:

  1. Cut halves of slightly thawed plums into cubes, roll in 1 tbsp. (9 g) of flour.
  2. Pour the remaining flour, oatmeal, baking powder and salt into a medium bowl, add cinnamon and stir.
  3. Place softened butter in a large bowl, beat with a mixer at medium speed, add sugar, continue beating until creamy. Add eggs one at a time, mixing thoroughly after each addition.
  4. Gradually add half of the flour mixture into the egg-butter mixture and mix with a mixer at low speed until smooth. Then pour in the milk, add the remaining flour mixture, add yogurt, and mix. Add pieces of plums rolled in flour, mix gently.
  5. Place 12 paper cups into two 6-pieces muffin tins and fill them with the resulting dough.
  6. Cut the fresh plums in half lengthwise, remove the pits, and cut into thin slices.
  7. Place thinly sliced plums on top of the dough.
  8. Bake in an oven preheated to 180°C (350⁰F) for 25-30 minutes. Place the muffins on a wire rack and let cool slightly.
  9. Serve the finished muffins warm or at room temperature.
