how to cook Frozen Mixed Berry Muffins?

STEP 1

To start, preheat your oven to 180°C (350⁰F). Take slightly thawed raspberries and roll them in 1 tablespoon of flour, making sure to coat them well. Do the same with the blueberries, rolling them in 1 tablespoon of flour as well. This will prevent any excess liquid from seeping into the dough.

TIPS: Frozen blueberries and raspberries can be substituted for fresh ones, removing the need to coat them in flour.

STEP 2

In a medium bowl, combine the remaining flour, baking powder, and salt. Give it a good stir to mix everything together.

STEP 3

Now, let’s move on to the wet ingredients. In a large bowl, crack an egg and add sugar and vanilla sugar. Use a mixer to beat them until you get a fluffy and pale mixture.

STEP 4

Gradually add half of the flour mixture to the egg-sugar mixture. Then, pour in the milk and condensed milk. Add the remaining half of the flour mixture and melted butter. Mix everything together with the mixer on low speed until you have a smooth dough.

TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

  • Baking powder – 1 tsp. (5 g)
  • Eggs – 1 pc. (50 g)
  • Salt – 1/6 tsp. (1 g)
  • Sugar – 1/4 cup (50 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Condensed milk – 1/4 can (95 g)
  • Frozen raspberries – 1/5 cup (40 g)
  • Frozen blueberries – 1/5 cup (40 g)
  • Melted butter – 1/4 cup (60 g)

additionally

  • Powdered sugar
  • Frozen raspberries
  • Frozen blueberries

Cooking steps:

  1. Roll slightly thawed raspberries in 1 tbsp. (9 g) of flour, roll slightly thawed blueberries in 1 tbsp. (9 g) of flour as well.
  2. Pour the remaining flour, baking powder and salt into a medium bowl and stir.
  3. Place the egg in a large bowl, add sugar and vanilla sugar, beat with a mixer into a fluffy pale mass.
  4. Gradually add half of the flour mixture to the egg-sugar mixture, then pour in milk and condensed milk. Add the remaining half of the flour mixture, add melted butter, mix with a mixer at low speed until smooth. Add berries rolled in flour and mix gently.
  5. Place the paper cups into a 6-pieces muffin tin, and fill 3/4 full with the resulting dough. Place frozen raspberries and blueberries on top.
  6. Bake in an oven preheated to 180°C (350⁰F) for 20 minutes. Place the muffins on a wire rack and let cool slightly.
  7. Lightly sprinkle the finished muffins with powdered sugar and serve warm or at room temperature.
