  • Baking soda – 1/3 tsp. (2 g)
  • Melted butter – 1/4 cup (60 g)
  • Chopped nuts – 1/3 cup (50 g)

for the icing

  • Powdered sugar – 1/4 cup (50 g)
  • Sour cream – 1 tbsp. (15 g)

Cooking steps:

  1. Put flour into a medium bowl, sift cocoa powder through a sieve, add baking powder, baking soda and salt, mix.
  2. Place eggs in a large bowl, add sugar, beat with a mixer into a fluffy pale mass.
  3. Gradually add half of the flour mixture to the egg-sugar mixture, then pour in the milk and buttermilk. Add the remaining half of the flour mixture, add melted butter, mix with a mixer at low speed until smooth. Add chopped nuts, mix.
  4. Place the paper cups into a 6-pieces muffin tin, and fill 3/4 full with the resulting dough.
  5. Bake in an oven preheated to 180°C (350⁰F) for 20 minutes. Place the muffins on a wire rack and let cool.

Icing

  1. Put powdered sugar into a small bowl, add sour cream, mix thoroughly until smooth.
  2. Spread the icing over prepared muffins and serve warm or at room temperature.
