In a medium bowl, combine the remaining flour, baking powder, and salt. Stir them together until well mixed.

Next, place an egg in a large bowl and add sugar. Use a mixer to beat the mixture until it becomes a fluffy and pale mass.

Gradually add half of the flour mixture to the egg-sugar mixture. Then, pour in the milk and add sour cream. Add the remaining half of the flour mixture and pour in the melted butter. Mix everything together with a mixer on low speed until the dough becomes smooth.

  • Sour cream – 1/5 cup (50 g)
  • Milk – 2 tbsp. (30 g)
  • Frozen cherries – 1/4 cup (50 g)
  • Melted butter – 3 tbsp. (42 g)
  • Coarsely chopped dark chocolate – 1/2 bar (45 g)

Cooking steps:

  1. Roll slightly thawed cherries in 1 tbsp. (9 g) of flour.
  2. Put the remaining flour, baking powder and salt into a medium bowl and stir.
  3. Place the egg in a large bowl, add sugar, beat with a mixer into a fluffy pale mass.
  4. Gradually add half of the flour mixture to the egg-sugar mixture, then pour in the milk, add sour cream. Add the remaining half of the flour mixture, pour in the melted butter, mix with a mixer at low speed until smooth. Add coarsely chopped chocolate, cherries rolled in flour, and mix gently.
  5. Place the paper cups into a muffin pan, and fill 3/4 full with the resulting dough. Place coarsely chopped chocolate on top and arrange the cherries.
  6. Bake in an oven preheated to 180°C (350⁰F) for 25-30 minutes. Place the muffins on a wire rack and let cool slightly.
  7. Serve the finished muffins warm or at room temperature.
