In a medium bowl, combine the remaining flour, baking soda, baking powder, salt, and poppy seeds. Give it a good stir.

In a large bowl, crack the eggs and add the sugar. Use a mixer to beat them until they become a fluffy pale mass.

  • Baking soda – 1/2 tsp. (3 g)
  • Salt – 1/6 tsp. (1 g)
  • Eggs – 1 pc. (50 g)
  • Buttermilk – 1/3 cup (83 g)
  • Melted butter – 3 tbsp. (42 g)
  • Frozen raspberries – 1/3 cup (65 g)

  • Powdered sugar

Cooking steps:

  1. Roll slightly thawed raspberries in 1 tbsp. (9 g) of flour.
  2. Pour the remaining flour, baking soda, baking powder and salt into a medium bowl, add poppy seeds, and stir.
  3. Place eggs in a large bowl, add sugar, beat with a mixer into a fluffy pale mass.
  4. Gradually add half of the flour mixture into the egg-sugar mixture, then pour in the buttermilk. Add the remaining flour mixture, add melted butter, mix with a mixer at low speed until smooth. Add raspberries rolled in flour and mix gently.
  5. Place the paper cups into a 6-pieces muffin tin and fill 3/4 full with the resulting dough. Place raspberries on top.
  6. Bake in an oven preheated to 180°C (350⁰F) for 25-30 minutes. Place the muffins on a wire rack and let cool slightly.
  7. Lightly sprinkle the finished muffins with powdered sugar and serve warm or at room temperature.
