  • Lemon juice – 1 tbsp. (15 g)
  • Buttermilk – 2/5 cup (100 g)
  • Vegetable oil – 1/4 cup (60 g)
  • Eggs – 1 pc. (50 g)
  • Kiwi – 2 pcs. (150 g)

Cooking steps:

  1. Peel the kiwi. Cut one kiwi into thin slices, the other into cubes.
  2. Add flour, coconut shreds, baking powder and salt to a medium bowl and stir to combine.

  5. Grease a 6-pieces muffin tin with butter and sprinkle with flour. Fill 3/4 full with the resulting dough. Place thinly sliced kiwi on top and sprinkle with coconut shreds.
  6. Bake in an oven preheated to 180°C (350⁰F) for 25-30 minutes. Place muffins on a wire rack and let cool for 10 minutes.
