Moist Raisin Oil Muffins

Ingredients:

  • Sugar – 1/4 cup (50 g)
  • Baking powder – 1 tsp. (5 g)
  • Milk – 2/5 cup (100 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Vegetable oil – 1/4 cup (60 g)
  • Eggs – 1 pc. (50 g)
  • Salt – 1/6 tsp. (1 g)
  • Raisins – 1/4 cup (45 g)

  • Powdered sugar

Cooking steps:

  1. Add flour, baking powder and salt to a medium bowl and stir.
  2. Place eggs in a large bowl, add sugar and vanilla sugar, beat with a mixer into a fluffy pale mass.
  3. Gradually add half of the flour mixture to the egg-sugar mixture, then pour in the milk. Add the remaining half of the flour mixture, add vegetable oil, mix with a mixer at low speed until smooth. Add raisins, mix gently.
  4. Place the paper cups into a 6-pieces muffin tin, and fill 3/4 full with the resulting dough.
  5. Bake in an oven preheated to 180°C (350⁰F) for 20 minutes. Place on a wire rack and let cool slightly.
  6. Sprinkle the finished muffins with powdered sugar and serve warm or at room temperature.
