Italian Stuffed Tomato Eggplants


  • Eggplants – 2 pcs. (420 g)
  • Tomatoes – 5 pcs. (300 g)
  • Mozzarella – 1 pack (200 g)
  • Salt – 1 tsp. (6 g)
  • Vegetable oil – 2 tbsp. (28 g)
  • Dried basil – 1/2 tsp. (1 g)


  • Parsley
  • Mayonnaise

Cooking steps:

  1. Make several cuts along each eggplant (slices about 1 cm thick), without cutting all the way through. Transfer to a large bowl, add salt and leave for 20 minutes. Then rinse the eggplants from salt and dry.
  2. Cut the tomatoes into slices.
  3. Then cut the mozzarella into slices.
  4. Place the prepared eggplants on a baking sheet lined with parchment paper. Insert tomato slices and slices of mozzarella into the slits on the eggplants. Brush the eggplants with vegetable oil on top and sprinkle with dried basil.
  5. Bake in an oven preheated to 180⁰C (350⁰F) for 30 minutes.
  6. Place the finished eggplants on a plate, pour over mayonnaise, and garnish with chopped parsley.
