To begin, preheat the oven to 180°C (350⁰F). Take slightly thawed raspberries and roll them in 1 tablespoon of flour to prevent excess liquid from seeping into the dough.

TIPS: Fresh raspberries can be used instead of frozen ones. In this case you don’t need to coat them in flour.

In a medium bowl, combine the remaining flour, buckwheat flour, coconut shreds, baking powder, and salt. Stir the ingredients together until well mixed.

TIPS: If you don’t have buckwheat flour, no worries! You can easily grind some buckwheat yourself using a coffee grinder or food chopper.

Next, place the eggs in a large bowl and add the sugar. Use a mixer to beat the mixture until it becomes a fluffy and pale mass.

Gradually add half of the flour mixture to the egg-sugar mixture. Then, pour in the milk and melted butter. Finally, add the remaining half of the flour mixture. Mix everything together with the mixer on low speed until the dough becomes smooth.

TIPS: Melt your butter either on the stove or in the microwave – whichever is more convenient for you.

TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

Healthy Chocolate Raspberry Muffins

  • Flour – 3 tbsp. (27 g)
  • Baking powder – 1 tsp. (5 g)
  • Salt – 1/6 tsp. (1 g)
  • Milk – 4/5 cup (200 g)
  • Buckwheat flour – 1/3 cup (66 g)
  • Coconut shreds – 1/3 cup (22 g)
  • Frozen raspberries – 1/4 cup (50 g)
  • Melted butter – 1/4 cup (60 g)
  • Coarsely chopped dark chocolate – 1/2 bar (45 g)

additionally

  • Frozen raspberries
  • Coconut shreds
  • Powdered sugar

Cooking steps:

  1. Roll slightly thawed raspberries in 1 tbsp. (9 g) of flour.
  2. Pour the remaining flour, buckwheat flour, coconut shreds, baking powder and salt into a medium bowl and stir.
  3. Place eggs in a large bowl, add sugar, beat with a mixer into a fluffy pale mass.
  4. Gradually add half of the flour mixture to the egg-sugar mixture, then pour in the milk, melted butter. Add the remaining half of the flour mixture, mix with a mixer at low speed until smooth. Add coarsely chopped chocolate, raspberries rolled in flour, and mix gently.
  5. Place the paper cups into a 6-pieces muffin tin, and fill 3/4 full with the resulting dough. Sprinkle coconut shreds on top and add raspberries.
  6. Bake in an oven preheated to 180°C (350⁰F) for 25-30 minutes. Place the muffins on a wire rack and let cool slightly.
  7. Lightly sprinkle the finished muffins with powdered sugar, serve warm or at room temperature.
