German Jam Butter Cake

for the crust

  • Rich yeast dough – 1/2 pack (250 g)

for the filling

  • Strawberry jam – 1/3 cup (100 g)
  • Sugar – 1 tbsp. (12 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Chilled butter – 2 tbsp. (28 g)
  • Almond flakes – 2 tbsp. (12 g)

  • Powdered sugar

Cooking steps:

  1. Place a sheet of rich yeast dough, thawed according to package instructions, on a lightly floured surface. Roll out into a 20cm x 20cm square.
  2. Grease a 20cm x 20cm square baking tin with butter and sprinkle with flour. Using a rolling pin, transfer the rolled-out dough into the prepared tin. Cover the tin with cling film and leave to rise in a warm place for 40 minutes.

  1. Add sugar and vanilla sugar to a medium bowl and stir.
  2. Grate the chilled butter on a coarse grater.

  1. Make small pits in the yeast dough at a distance of 2-3 cm from each other. Fill the pits with strawberry jam. Distribute the grated butter evenly between the pits with the jam. Sprinkle sugar mixture and almond flakes on top.
  2. Bake the cake in an oven preheated to 200°C (400⁰F) for 18-20 minutes. Leave the finished cake in the tin for 5 minutes. Remove from the tin and cool. Sprinkle with powdered sugar.

  1. Everything ingenious is simple! A very unexpected combination – but if the cake rose so magnificently, it means it works. Wonderful, thank you!
