how to cook French Lentil Tomato Avocado Salad?
STEP 1
First, grab a sieve and toss those canned lentils in there. Let the excess liquid drain off and give them a good rinse with some water.
STEP 2
Next up, it’s tomato time! Give those juicy red beauties a good wash and slice them up into nice, thin slices.
STEP 3
Now, let’s tackle those green onions. Give them a good wash, dry them off, and chop them up nice and fine.
STEP 4
Time to work on the parsley. Give it a good wash, dry it off, and finely chop it up.
TIPS: If you don’t have fresh parsley on hand, don’t worry! You can easily substitute it with dried parsley. While fresh parsley adds a vibrant touch, dried parsley still brings a pleasant herbaceous flavor to your dish. So, feel free to use whichever option suits your pantry.
STEP 5
Alright, avocado lovers, this one’s for you. Cut that ripe avocado in half, get rid of the pit, peel off the skin, and cut it into big, delicious cubes.
TIPS: Ever wondered how to tell if an avocado is perfectly ripe? Simply give it a gentle press near the stalk. If the fruit is slightly dented, it’s good to go. However, if it feels too soft, it might be overripe.
STEP 6
Now, let’s whip up a tasty dressing. Grab a small bowl and pour in some vegetable oil, apple cider vinegar, and water. Add a dollop of mustard, season it up with some black pepper and salt, and give it a good mix.
TIPS: If you’re looking for a substitute for apple cider vinegar, check out my article on “How to Substitute Any Vinegar?”. It provides helpful suggestions to suit your needs.
STEP 7
In a big bowl, toss in those lentils, chopped veggies, and herbs. Pour in some of that dressing and gently mix it all together.
STEP 8
Time to add a little something extra. Crumble some ricotta cheese over the top of the salad for an extra creamy touch.
TIPS: If you can’t find ricotta, don’t worry! Feta can be used as a suitable substitute.
STEP 9
To finish it off, sprinkle some chopped parsley leaves all over the dish and drizzle the remaining dressing on top.
STEP 10
And there you have it, folks! A delicious French Lentil Tomato Avocado Salad. Dig in and enjoy! Bon appetit!
