In a medium bowl, combine the flour and salt, and stir well.

Next, take a large bowl and place the eggs in it. Add the sugar and vanilla sugar, then beat the mixture with a mixer until it becomes a fluffy and pale mass.

Gradually pour the flour mixture into the egg-sugar mixture, followed by a slow stream of milk. Finally, add the melted butter and continue mixing with the mixer at a low speed until the dough becomes smooth.

TIPS: Melt your butter either on the stove or in the microwave – whichever is more convenient for you.

Now, take a 24cm round glass baking dish and grease it with butter. Arrange the cherries at the bottom of the prepared dish.

TIPS: For baking clafoutis, use a low baking dish. If you’re using a taller baking dish, you’ll need to adjust the cooking time accordingly.

TIPS: When making clafoutis, look for a glass or ceramic baking dish. Metal baking tin can cause the berries in the cake to oxidize.

French Cherry Clafoutis Cake


  • Cherries – 1 1/2 containers (750g)
  • Eggs – 3 pcs. (150 g)
  • Sugar – 1/2 cup (100 g)
  • Flour – 1/2 cup (80 g)
  • Milk – 1 cup (250 g)
  • Salt – 1/8 tsp. (1 pinch)
  • Melted butter – 2 tbsp. (28 g)
  • Vanilla sugar – 1 sachet (10 g)


  • Powdered sugar

Cooking steps:

  1. Wash the cherries and remove the pits.
  2. Add flour and salt to a medium bowl and stir.
  3. Place eggs in a large bowl, add sugar and vanilla sugar, beat with a mixer into a fluffy pale mass.
  4. Pour the flour mixture into the egg-sugar mixture, pour in the milk in a slow stream. Then add the melted butter, mix with a mixer at low speed until smooth.
  5. Grease a 24cm round glass baking dish with butter. Place cherries on the bottom of the prepared dish and fill with dough.
  6. Bake in a preheated oven at 175°C (350⁰F) for 30-35 minutes.
  7. Sprinkle the finished cake with powdered sugar.


  1. This is not a cake, it’s the BOMB!!! This is the second time I’ve made it according to your recipe. I have never baked such delicious dessert before! It’s delicious, it’s plentiful, and it doesn’t take much time!
