- Plums – 6 pcs. (250 g)
- Lemon juice – 2 tsp. (10 g)
- Sugar – 1/4 cup (50 g)
- Place room temperature egg whites in a medium bowl, add salt, and beat with a mixer until fluffy. Place the egg yolks and sugar in a large bowl and whisk until thick and pale.
- Add half the ground nuts and lemon zest to the egg mixture, stir. Then gently fold in the beaten egg whites, add the remaining ground nuts, stir.
- Place the resulting dough into a pre-greased silicone 6-pieces muffin pan.
- Bake in an oven preheated to 160°C (320⁰F) for 40-45 minutes. Allow the finished crusts to cool completely in the muffin pan, then remove the cooled crusts.
