Easy Vegan Avocado Potato Salad
Ingredients:

- Avocado – 1 pc. (250 g)
- Green onion – 1/2 bunch (50 g)

- Greek yogurt – 1/3 cup (83 g)
- Lemon juice – 1 tsp. (5 g)
- Water – 1 tbsp. (15 g)
- Salt – 1/6 tsp. (1 g)
- Ground black pepper – 1/3 tsp. (1 g)

- Napa cabbage
- Green onions
Cooking steps:
- Cut the peeled boiled potatoes into small cubes.
- Then cut the ripe avocado in half, remove the pit, and cut into small cubes.
- Finely chop the green onions.
Dressing
- Place yogurt in a medium bowl, add lemon juice and water, season with black pepper and salt, mix thoroughly.
Assembly
- Put boiled potatoes cut into cubes in a large bowl, pour in yogurt dressing, and stir. Add avocado cubes and finely chopped green onions, stir gently.
