  • Flour – 1 1/2 cup (240 g)
  • Salt – 1/2 tsp. (3 g)
  • Ground nuts – 1/2 cup (75 g)
  • Baking powder – 1 tsp. (5 g)
  • Ricotta – 1 package (250 g)
  • Dried cranberries – 1/4 cup (45 g)
  • Coarsely chopped walnuts – 1/4 cup (30 g)

for the icing

  • Powdered sugar – 1 cup (200 g)
  • Milk – 2 tbsp. (30 g)


  • Colored sprinkles
  • Meringue

Cooking steps:

  1. In a medium bowl, add flour, cornmeal, ground nuts, baking powder and salt and stir to combine.
  2. Place softened butter in a large bowl, add sugar, beat with a mixer at medium speed until creamy. Add ricotta to the butter mixture and mix well.
  3. Add eggs one at a time, mixing thoroughly after each addition.
  4. Gradually add the flour mixture to the butter-ricotta mixture and mix with a mixer at low speed until smooth. Place dried cranberries and chopped walnuts into the resulting dough and mix thoroughly.
  5. Place the dough into four 8cm paper Easter cake pans. Level the top with a spatula.
  6. Bake the cakes in an oven preheated to 175°C (350⁰F) for 45-50 minutes. Remove the finished cakes from the oven.
