how to cook Easy Raspberry Sponge Cake?
STEP 1
To start, preheat your oven to 180°C (350⁰F). Next, drain the liquid from the canned peaches and place them on a paper towel to pat them dry.
TIPS: If you don’t have canned peaches on hand, feel free to use fresh ones instead. They’ll work just as well in your recipe.
STEP 2
Cut the peach halves into slices.
STEP 3
In a small bowl, put slightly thawed raspberries and add 1 tbsp. of flour. Roll the raspberries in the flour to coat them.
TIPS: Frozen raspberries can be substituted for fresh ones, removing the need to coat them in flour.
STEP 4
Now, take a large bowl and beat the eggs with a mixer. Gradually add sugar and continue beating for about 5 minutes until you get a fluffy and pale mixture.
STEP 5
Add the remaining flour to the mixture and mix it carefully.
STEP 6
Grease a 20cm round baking tin with butter and sprinkle it with flour. Arrange the sliced peaches and raspberries at the bottom of the prepared tin.

Then, pour the prepared dough over the peaches and raspberries.

Place the tin with the dough in the preheated oven at 180°C (350⁰F) and bake it for 35-40 minutes until it turns golden brown.

- Canned peaches – 1/2 can (205 g)
- Frozen raspberries – 1/2 cup (100 g)
- Salt – 1/8 tsp. (1 pinch)

Cooking steps:
- Drain liquid from canned peaches. Place the peaches on a paper towel and pat dry. Cut the peach halves into slices.
- Place slightly thawed raspberries in a small bowl, add 1 tbsp. (9 g) of flour. Roll raspberries in flour.
- Put the eggs in a large bowl and beat with a mixer, gradually adding sugar, for 5 minutes until a fluffy pale mass is obtained.
- Pour the remaining flour into the resulting mass and mix carefully.
- Place sliced peaches and raspberries on the bottom of a pre-greased and floured 20cm round baking tin. Carefully pour the prepared dough on top.
- Bake in an oven preheated to 180°C (350⁰F) for 35-40 minutes. Leave the cake in the tin for 5 minutes, then remove and cool completely on a wire rack.
- Sprinkle the finished cake with coconut shreds.
