In a small bowl, put slightly thawed raspberries and add 1 tbsp. of flour. Roll the raspberries in the flour to coat them.

TIPS: Frozen raspberries can be substituted for fresh ones, removing the need to coat them in flour.

Now, take a large bowl and beat the eggs with a mixer. Gradually add sugar and continue beating for about 5 minutes until you get a fluffy and pale mixture.

Easy Raspberry Sponge Cake


  • Sugar – 1/2 cup (100 g)
  • Eggs – 3 pcs. (150 g)
  • Flour – 1/2 cup (80 g)
  • Canned peaches – 1/2 can (205 g)
  • Frozen raspberries – 1/2 cup (100 g)
  • Salt – 1/8 tsp. (1 pinch)


  • Coconut shreds

Cooking steps:

  1. Drain liquid from canned peaches. Place the peaches on a paper towel and pat dry. Cut the peach halves into slices.
  2. Place slightly thawed raspberries in a small bowl, add 1 tbsp. (9 g) of flour. Roll raspberries in flour.
  3. Put the eggs in a large bowl and beat with a mixer, gradually adding sugar, for 5 minutes until a fluffy pale mass is obtained.
  4. Pour the remaining flour into the resulting mass and mix carefully.
  5. Place sliced peaches and raspberries on the bottom of a pre-greased and floured 20cm round baking tin. Carefully pour the prepared dough on top.
  6. Bake in an oven preheated to 180°C (350⁰F) for 35-40 minutes. Leave the cake in the tin for 5 minutes, then remove and cool completely on a wire rack.
  7. Sprinkle the finished cake with coconut shreds.
