  • Powdered sugar – 2 tbsp. (24 g)
  • Almond flakes – 2 tbsp. (12 g)

for the crust

  • Puff pastry – 1/2 pack (250 g)

for the filling

  • Egg yolks – 2 pcs. (40 g)
  • Sugar – 1/4 cup (50 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Milk – 1/2 cup (125 g)
  • Corn starch – 2 tbsp. (16 g)
  • Peach juice – 5 tbsp. (75 g)
  • Ground nuts – 1/3 cup (50 g)

for the syrup

  • Sugar – 1/2 cup (100 g)
  • Peach juice – 4 tbsp. (60 g)

Cooking steps:

  1. Wash the peaches, remove the pit and slice thinly.


  1. Place egg yolks in a bowl, add sugar and vanilla sugar. Add corn starch, pour in 1 tbsp. (15 g) of the peach juice, mix thoroughly.
  2. Pour milk and remaining peach juice into a saucepan, put on heat, and bring to a boil. Add one third of the hot milk to the peach-egg mixture and stir quickly. Pour the resulting mixture back into the saucepan with the remaining milk and place the saucepan over medium heat. Cook with constant stirring until the mixture thickens.
  3. Add ground nuts to the resulting custard and stir. Cover the prepared custard with cling film in contact and cool.


  1. Place puff pastry, thawed according to package instructions, onto a lightly floured surface.
  2. Roll out the dough into a 23cm x 23cm square.


  1. Transfer the dough to a baking sheet previously lined with parchment paper.
  2. Spread the cooled custard in a thick layer over the center of the dough, leaving 2 cm from each edge.
  3. Place peach slices on top of the custard, folding the edges of the dough to create a border.
  4. Sprinkle the cake with powdered sugar and almond flakes. Bake in an oven preheated to 220°C (430⁰F) for 15-20 minutes.


  1. Mix apricot juice with sugar in a saucepan, put on fire, bring to a boil. Cook until a thick syrup is obtained.
