Next, grease a baking sheet with vegetable oil and line it with parchment paper. Place the dough balls onto the prepared baking sheet. Cover the sheet with cling film and let the dough rise for about an hour in a warm, draft-free spot. Ideally, the temperature should be around 25°C (77⁰F).
TIPS: If you don’t have cling film, a clean kitchen towel can be used to cover the dough.
STEP 3
In a large bowl, combine ricotta, yogurt, and orange juice. Use an immersion blender to mix everything until it becomes creamy and smooth.

- Eggs – 1 pc. (50 g)
- Water – 1 tbsp. (15 g)
- Candied orange zest
- Orange jam
Cooking steps:
- Thaw the rich yeast dough according to the instructions on the package. Cut the dough into 12 equal parts and form into 12 balls.
- Place the dough balls on a baking sheet pre-greased with vegetable oil or lined with parchment paper. Cover the baking sheet with cling film and leave to rise in a warm, draft-free place for 1 hour.
Filling
- Place ricotta in a large bowl, add yogurt and orange juice, beat with an immersion blender until creamy.
- Place eggs in a medium bowl, add sugar, beat with a mixer into a fluffy pale mass.
- Add orange zest to the ricotta mixture and stir gently with a spatula. Add the egg-sugar mixture and mix until smooth.
Assembly
- Make a pit in the center of each ball and place the ricotta-orange filling.
