To begin, preheat the oven to 180°C (350⁰F). In a medium bowl, pour the flour and sift the cocoa powder through a sieve. Add the baking powder, baking soda, and salt, and mix well.

TIPS: Keep in mind that the color of your muffins will vary depending on the quality of the cocoa powder you use. If you want a lighter shade, go for more light cocoa powder, and if you prefer a darker hue, opt for the darker ones.

Gradually add half of the flour mixture to the egg-sugar mixture. Then, pour in the milk and buttermilk, followed by the remaining half of the flour mixture. Add the melted butter and continue mixing with the mixer at low speed until the dough becomes smooth.

TIPS: Melt your butter either on the stove or in the microwave – whichever is more convenient for you.

TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

In a small bowl, combine powdered sugar and sour cream. Mix thoroughly until a smooth icing is achieved.

TIPS: When it comes to icing, I’ve got you covered. If it’s too thick for your liking, simply add a little more sour cream. On the other hand, if it’s too thin, sprinkle in some powdered sugar to thicken it up.

TIPS: Now, here’s one more head up about icing. It hardens pretty quickly. So, make sure to use it right away to avoid any clumpy disasters.

Spread the sour cream icing onto the cooled muffins, ensuring an even distribution.

TIPS: When it comes to spreading thick icing on your cake, using an icing spatula is the way to go. It’s not only easier but also more convenient. Just make sure to dip the spatula in water from time to time to keep the icing smooth and manageable.
