how to cook Easy Double Chocolate Muffins?
STEP 1

To begin, preheat the oven to 180°C (350⁰F). In a medium bowl, pour the flour and sift the cocoa powder through a sieve. Add the baking powder and salt, and mix everything together.
TIPS: Keep in mind that the color of your muffins will vary depending on the quality of the cocoa powder you use. If you want a lighter shade, go for more light cocoa powder, and if you prefer a darker hue, opt for the darker ones.
STEP 2

Next, take a large bowl and place the eggs in it. Add the sugar and vanilla sugar, then beat the mixture with a mixer until it becomes a fluffy pale mass.
STEP 3

Gradually add half of the flour mixture to the egg-sugar mixture. Then, pour in the condensed milk and add the remaining half of the flour mixture. Finally, add the melted butter and mix everything together with a mixer at low speed until the dough becomes smooth.
TIPS: Melt your butter either on the stove or in the microwave – whichever is more convenient for you.
TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!
STEP 4

Now, gently mix in the coarsely chopped chocolate into the dough.
STEP 5

Take 6 paper cups and place them into a 6-pieces muffin tin. Fill each cup about 3/4 full with the prepared dough.
TIPS: Another suggestion is to grease the muffin tin with butter and sprinkle it with flour.
STEP 6

Sprinkle some chocolate chips on top of each muffin.
STEP 7

Place the muffin tin into the preheated to 180°C (350⁰F) oven and bake for about 20 minutes.

STEP 8

Once baked, transfer the muffins onto a wire rack and allow them to cool slightly.
TIPS: Wondering if your muffins are ready? Stick a wooden stick or toothpick into the center – if it comes out clean, your muffins are done.
STEP 9

Carefully remove the paper cups from the cooled muffins.
TIPS: Muffins are at their absolute best when enjoyed on the day they are made. However, if you can’t resist saving some for later, no worries! Just pop them into an airtight container and store them at room temperature or in the fridge for up to 3 days.
STEP 10

These delicious Easy Double Chocolate Muffins can be served warm or at room temperature, perfect for enjoying with a cup of tea. Bon appétit!
