- Baking powder – 1/2 tsp. (3 g)
- Vanilla sugar – 1 sachet (10 g)
- Chilled butter – 1/4 cup (60 g)
for the filling
- Sugar – 2 tbsp. (24 g)
- Ground ginger – 1/2 tsp. (1 g)
- Frozen red currants – 1/2 cup (100 g)
- Canned apricots – 1 can (240 g)

- Whipped cream
Cooking steps:
Filling
- Drain the liquid from canned apricots and cut the apricots into small cubes.
- Pour sugar and ground ginger into a medium bowl, add chopped apricots and slightly thawed red currants, mix thoroughly.
Dough
- Pour flour into a medium bowl, add sugar and vanilla sugar, add baking powder, mix.
- Add chilled butter, cut into cubes, into flour mixture. Stir until each piece of butter is evenly coated with flour.
- Grind the resulting mixture until crumbly crumbs are obtained. Add yogurt to the butter crumbs and mix thoroughly.
Assembly
- Grease four 6.5cm to 8.5cm ramekins with butter. Place the fruit and berry filling into the prepared ramekins and distribute evenly. Divide the shortbread dough into 4 equal parts and place on top of the fruit and berry filling.
- Place the ramekins in an oven preheated to 180°C (350⁰F) and bake for 25 minutes. Remove from oven, cool slightly.
