TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

  • Baking soda – 1/6 tsp. (1 g)
  • Salt – 1/3 tsp. (2 g)
  • Liquid yogurt – 1/2 cup (125 g)
  • Softened butter – 1/3 cup (80 g)
  • Eggs – 1 pc. (50 g)
  • Sugar – 1/2 cup (100 g)
  • Frozen blueberries – 1/2 cup (100 g)

  • Powdered sugar

Cooking steps:

  1. Add flour, baking powder, baking soda and salt to a medium bowl and stir to combine.
  2. Place softened butter in a large bowl, add sugar, beat with a mixer at medium speed until creamy. Add eggs, mix thoroughly.
  3. Gradually add half of the flour mixture to the egg-butter mixture, then pour in yogurt. Add the remaining half of the flour mixture, and mix with a mixer at low speed until smooth.
  4. Place the dough in a pre-greased and floured 20cm x 20cm square baking tin. Level the top with a spatula. Place slightly thawed blueberries on top of the dough.
  5. Bake the cake in an oven preheated to 180°C (350⁰F) for 40-45 minutes. Leave the finished cake in the tinfor 10 minutes. Remove from the tin and let cool completely on a wire rack.
  6. Sprinkle the finished cake with powdered sugar.
