how to cook Easy Apple Raspberry Cobbler?
STEP 1
To begin, preheat the oven to 180°C (350⁰F). Start by washing the apples, then peel, core, and cut them into slices.
TIPS: Peeling apples can be made simple with a vegetable peeler or a small sharp knife. Choose the method that works best for you.
TIPS: Wondering how to core apples? You can use a special apple corer or a small sharp knife to easily remove the core.
STEP 2
Place the apple slices in a large bowl and add slightly thawed raspberries, sugar, and vanilla sugar.
TIPS: If you don’t have frozen raspberries, fresh ones can be a fantastic alternative. They’ll add a burst of flavor to your recipe and give it a delightful twist.
STEP 3
Next, add ground cinnamon and cornstarch to the apple-raspberry mixture, followed by the melted butter. Gently stir everything together.
TIPS: Melt your butter either on the stove or in the microwave – whichever is more convenient for you.
TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well!
STEP 4
In a separate medium bowl, combine the flour with cooled butter cubes. Stir until each piece of butter is evenly coated with flour.
TIPS: When it comes to butter, it’s important to keep it chilled and not softened. Using softened butter will cause it to mix too well with the other ingredients, resulting in a dough that lacks elasticity. This can lead to greasy and tough baked goods, which we definitely want to avoid.
TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!
STEP 5
Now, grind the resulting mixture until you achieve crumbly crumbs.
TIPS: If you prefer an easier method, you can grate chilled butter on a coarse grater and mix it with flour.
TIPS: While this recipe suggests using a pastry cutter to cut butter, there are other techniques you can explore. Check out my article “How to Grind Butter with Flour: 5 Great Ways” for more tips and tricks.
STEP 6
Add sugar, ground nuts, baking powder, and salt to the creamy flour mixture. Mix everything well.
TIPS: Feel free to choose your favorite nuts or peanuts, ensuring they are finely ground. You can grind the nuts in a coffee grinder or kitchen chopper. Alternatively, nut flour like almond flour can be used as a substitute for ground nuts.
STEP 7
Pour in the milk and add the eggs, thoroughly combining all the ingredients.
STEP 8
Transfer the dough onto a lightly floured work surface. Shape it into a circle about 1 cm thick and use a cookie cutter to cut out stars.
STEP 9
Grease a 23 cm x 15 cm rectangular baking dish with butter. Pour the cooled filling into the prepared dish.
STEP 10
Place the dough stars on top of the fruit and berry filling.
STEP 11
Put the dish in the preheated oven at 180°C (350⁰F) and bake for about 35 minutes, or until the cobbler turns golden brown.
