  1. Place room temperature egg whites in a medium bowl, add citric acid and salt, beat with a mixer until soft peaks form.
  2. Add vanilla sugar to the beaten egg whites. Then add 1 tbsp. of sugar at a time, beating for a few seconds between each addition.
  3. Beat until the sugar is completely dissolved and the mixture becomes thick and shiny. Add corn starch to the egg white-sugar mixture and mix gently.
  4. Line a baking sheet with parchment paper, securing the edges to the baking sheet with strokes of meringue. Place the resulting meringue on the prepared baking sheet. Make sure to form from 10 to 12 small circles with a diameter of 8-10 cm. Make a small pit in the center of each circle.
  5. Place the baking sheet with meringues in an oven preheated to 140°C (280⁰F), reduce to 100°C (210⁰F) and bake for 1 hour 15 minutes. Turn off the oven. Cool in the oven with the oven door slightly open.
  6. Peel the oranges and cut into rings. Prepare an orange curd according to this recipe, cool.
  7. Fill the finished meringues with orange curd, decorate with orange slices and candied fruits.
