To start, preheat your oven to 200°C (400°F). Next, boil the entire head of cauliflower in salted water until it’s halfway cooked.

While that’s going, peel the onion and finely chop it.

Give the parsley a good wash, dry it, and chop it up finely as well.

TIPS: If you don’t have fresh parsley on hand, don’t worry! You can easily substitute it with dried parsley. While fresh parsley adds a vibrant touch, dried parsley still brings a pleasant herbaceous flavor to your dish. So, feel free to use whichever option suits your pantry.

Wash the sweet pepper, remove the stem and seeds, and cut it into strips.

TIPS: If you don’t have fresh sweet peppers, frozen ones can come to the rescue. They are prepped and chopped, ready to be added to your pan or baking dish.

Now, grab a large bowl and put the minced chicken in it. Add the boiled rice, chopped onion, and parsley, and crack in the eggs. Season everything with salt and black pepper, and mix it all together until it’s well combined.

Ingredients:

  • Cauliflower – 1 pc. (1 kg)
  • Sweet pepper – 2 pcs. (350 g)
  • Grated cheese – 1/2 cup (50 g)
  • Sour cream – 2/5 cup (100 g)

for the filling

  • Minced chicken – 1 package (400 g)
  • Onions – 1 pc. (70 g)
  • Boiled rice – 1 cup (150 g)
  • Parsley – 1/4 bunch (13 g)
  • Eggs – 1 pc. (50 g)
  • Salt – 1/2 tsp. (3 g)
  • Ground black pepper – 1/3 tsp. (1 g)

  • Parsley
  • Water – 1/4 cup (63 g)           

Cooking steps:

  1. Boil the whole head of cauliflower in salted water until half cooked.

Filling

  1. Finely chop the onion and parsley.
  2. Place minced chicken in a large bowl, add boiled rice, add chopped onion and parsley, and add eggs. Season with salt and black pepper, mix thoroughly.

Assembly

  1. Carefully place the finished filling into the free space between the cauliflower florets. Place cauliflower with minced meat in an oil greased baking dish.
  2. Cut the sweet pepper into strips. Place chopped bell peppers around the head of cauliflower.
  3. Pour 1/2 cup (125 g) of water into the baking dish. Cover the top of the cauliflower with foil. Bake in an oven preheated to 200°C (400°F) for 30 minutes.
  4. Place sour cream in a small bowl, add grated cheese, stir.
  5. Remove the baking dish from the oven, remove the foil, and grease the top with sour cream mixture. Bake in an oven preheated to 180°C (350°F) for another 10 minutes.
  6. Sprinkle the finished dish with chopped parsley leaves and serve with sliced sweet pepper.
