Next, take a large bowl and crack the eggs into it. Add 1/3 cup (65 g) of sugar and vanilla sugar. Use a mixer to beat the mixture until it becomes a fluffy, pale mass.

Now, slowly add the flour mixture into the egg-sugar mixture. Gradually add the milk, pouring it in a slow stream. Finally, pour the melted butter into the mixture. Use the mixer at a low speed to blend everything together until you achieve a smooth consistency.

TIPS: Melt your butter either on the stove or in the microwave – whichever is more convenient for you.

Chocolate Sour Cherry Clafoutis


  • Flour – 5 tbsp. (45 g)
  • Sugar – 1/2 cup (100 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Eggs – 3 pcs. (150 g)
  • Milk – 1 cup (250 g)
  • Melted butter – 1/4 cup (60 g)
  • Salt – 1/6 tsp. (1 g)
  • Frozen cherries – 1/2 cup (100 g)
  • Coarsely chopped dark chocolate – 1/2 bar (45 g)


  • Powdered sugar
  • Sour cream
  • Cherry

Cooking steps:

  1. Put flour and salt to a medium bowl and stir.
  2. Place eggs in a large bowl, add 1/3 cup (65 g) of sugar and vanilla sugar, beat with a mixer into a fluffy pale mass.
  3. Pour the flour mixture into the egg-sugar mixture, pour in the milk in a slow stream, then add the melted butter, mix with a mixer at low speed until smooth.
  4. Pour the dough into a 22cm round ceramic baking dish, pre-greased with butter. Place slightly thawed cherries, coarsely chopped chocolate on top of the dough, sprinkle with the remaining sugar.
  5. Bake in a preheated oven at 180°C (350⁰F) for 40 minutes.
  6. Sprinkle the finished cake with powdered sugar, serve with sour cream, and garnish with cherries.
