Next, mix in some ricotta with the sugar-butter mixture. Add flour and baking powder, and make sure to mix everything together thoroughly until a dough forms.

Now, place the dough on a lightly floured work surface. Roll it out until it’s about 5 mm thick.
TIPS: For rolling out dough, it’s incredibly convenient to use either two Teflon or two silicone baking sheets.

Chocolate Orange Ricotta Cookies
Ingredients:
- Flour – 1 cup (160 g)
- Ricotta – 1/2 pack (125 g)
- Softened butter – 2/5 cup (96 g)
- Sugar – 1/4 cup (50 g)
- Baking powder – 1/5 tsp. (1 g)

- Orange zest
- Dark chocolate
Cooking steps:
- Place the butter in a large bowl and beat with a mixer at medium speed until creamy. Add ricotta, add flour and baking powder, mix thoroughly until a dough is obtained.
- Place the dough on a lightly floured work surface. Roll out the dough to a thickness of 5 mm.
- Sprinkle one side of the dough with sugar and run the rolling pin several times to press the sugar into the dough. Using a glass, cut out circles of the same diameter from the dough.
- Place some orange zest and chocolate chips in the center of each circle. Then fold each circle in half twice to form triangles.
- Using the edge of a glass, gently press down the center of each cookie to seal the filling securely. Transfer the resulting cookies to a baking sheet lined with parchment paper. Brush the cookies with egg yolk.
- Bake in an oven preheated to 180°C (350°F) for 30 minutes. Leave on the baking sheet for 5 minutes. Serve hot.
