  • Eggs – 2 pcs. (100 g)
  • Greek yogurt – 3/5 cup (150 g)
  • Lemon juice – 2 tbsp. (30 g)

for crust

  • Melted butter – 1/3 cup (80 g)
  • Ground corn flakes – 1 cup (80 g)

for the blueberry topping

  • Blueberries – 1/2 cup (90 g)
  • Sugar – 2 tbsp. (24 g)
  • Water – 1 tsp. (5 g)

Cooking steps:

Crust

  1. Put ground corn flakes into a medium bowl, pour in melted butter, and mix thoroughly.
  2. Spread the corn mixture into the bottom of a 20cm x 20cm square baking tin greased with butter and lined with parchment paper. Level and press firmly.
  3. Place the tin with the crust in an oven preheated to 180°C (350⁰F) and bake for 10 minutes. Remove the finished crust from the oven, reduce the temperature to 110°C (230⁰F).

Filling

  1. Place ricotta in a large bowl, add 2 tbsp. (50 g) of the yogurt, grind with an immersion blender until smooth.
  2. Place the remaining yogurt into the ricotta mixture, add vanilla sugar, sugar and flour, add eggs. Mix with a mixer at low speed until the ingredients are completely combined.

Blueberry topping

  1. Place blueberries in a medium bowl, add sugar and water. Crush some of the berries and mix.

Assembly

  1. Spread the ricotta filling over the cooled crust. Then pour a few tablespoons of blueberry topping onto the filling, making a marble pattern.
  2. Place the cheesecake in an oven preheated to 110°C (230⁰F) and bake for 45 minutes. Then open the oven door slightly and let it cool slowly for 1 hour. Place the baked cheesecake in the refrigerator for 1 hour until completely cooled.
