TIPS:  When it comes to butter, it’s important to keep it chilled and not softened. Using softened butter will cause it to mix too well with the other ingredients, resulting in a too soft dough. This way, your scones won’t be crumbly.

TIPS: Instead of using butter, you can opt for good quality margarine. It works just as well! But keep in mind that margarine contains salt. So, you might want to reduce the amount of salt in the recipe. Just a little heads up!

Next, use a pastry cutter to grind the mixture until it becomes crumbly crumbs.

  • Salt – 1/3 tsp. (2 g)
  • Sugar – 1/4 cup (50 g)
  • Chilled butter – 1/3 cup (80 g)
  • Buttermilk – 1 cup (250 g)
  • Vanilla sugar – 1 sachet (10 g)

for the filling

  • Softened cream cheese – 1/2 pack (125 g)
  • Powdered sugar – 2 tbsp. (24 g)

additionally

  • Powdered sugar
  • Raspberry jam

Cooking steps:

  1. In a medium bowl, add 1/4 cup (40 g) of flour, add chilled butter cut into cubes, mix. Grind until crumbly crumbs are obtained.
  2. Add the remaining flour into the butter mixture, add sugar, baking powder, soda, salt and vanilla sugar, mix.
  3. Make a well in the center of the resulting mass and pour in the buttermilk. Mix quickly.
  4. Place the resulting dough on a lightly floured work surface and carefully gather it into a 3 cm thick circle. Using a dough cutter with a diameter of 5-6 cm, cut out 10-12 scones.
  5. Place the scones on a pre-greased baking tray lined with parchment paper. Brush the top of each scone with vegetable oil. Bake in an oven preheated to 200°C (400⁰F) for 10-15 minutes. Cover the finished scones with a kitchen towel. Let cool slightly.

Filling

  1. Place softened cream cheese in a medium bowl, add powdered sugar, mix thoroughly until creamy.
  2. Cut the finished scones in half, fill with filling, sprinkle with powdered sugar. Serve with raspberry jam.

      1. Thank you for the detailed answer 🤗 I baked it with butter. I had no idea they were so delicious! Just AMAZING! You can’t force me to eat jam, but here I devoured scones with my jam on both cheeks😆 I have a few questions. While the scones were hot, you could feel the baking soda, can you do without it, increase the amount of baking powder? Instead of 15 minutes, I had to bake for 25, because they didn’t want to brown and in the end they still turned out pale. What did I do wrong? The scones turned out more like puffy cookies, hard on top and crumbly on the inside. Is this how it should be?

          3. It is also very important to preheat the oven in advance. In a hot oven, scones bake very quickly: about 10-15 minutes.
          How it works? The dough is gathered rather than kneaded so that individual pieces of cold butter remain. Cold butter melts quickly in a very hot oven, creating a flaky texture for the scones. Even in a hot oven, the scones immediately brown, but the center remains tender. 😎
          For a more golden crust, the scones can be brushed with vegetable oil or beaten egg yolk before baking. 😉
