TIPS: Frozen spinach not cutting it for you? Fresh spinach leaves can be a great alternative. Just blanch them in boiling water for 30 seconds, drain in a colander, and give them a good squeeze with a wooden spoon to remove excess liquid.

  • Grated cheese – 1 cup (100 g)
  • Dried garlic – 1/3 tsp. (1 g)
  • Ground black pepper – 1/3 tsp. (1 g)
  • Salt – 1/8 tsp. (1 pinch)

  • Eggs – 1 pc. (50 g)
  • Water – 1 tsp. (5 g)

Cooking steps:

  1. Lightly beat the egg with a whisk, add water and stir.

Filling

  1. Place thawed spinach in a fine sieve and press firmly with a wooden spoon to remove excess liquid. Distribute the drained spinach evenly over a paper towel, cover with a second towel, and pat dry.

Dough

  1. Place the puff pastry, defrosted according to package instructions, onto a lightly floured surface and roll out lightly.

Assembly

  1. Brush the rolled-out dough with the egg mixture, spread the grated cheese evenly, spacing 2 cm from one edge. Place squeezed spinach on top of the cheese, sprinkle with dried garlic, salt and pepper.
  2. Roll the filled dough into a log, starting with the short side and ending with the opposite unfilled edge. Cut the log into 1.5 cm wide rolls and brush the top with the remaining egg mixture.
  3. Place the resulting rolls on a baking sheet pre-lined with parchment paper.
  4. Preheat the oven to 175⁰C (350⁰F), place a baking sheet with rolls and immediately reduce the temperature to 150°C (300⁰F), bake for 15-20 minutes.
  5. Remove the finished rolls from the oven and cool slightly.
