Best Gluten Free Date Banana Loaf


  • Bananas – 1 pc. (70 g)
  • Raisins – 1/2 cup (90 g)
  • Dried apricots – 3/4 cup (90 g)
  • Pitted dates – 1 cup (125 g)
  • Coarsely chopped peanuts – 1/3 cup (50 g)
  • Corn flour – 1/4 cup (50 g)
  • Baking powder – 1 tsp. (5 g)
  • Egg whites – 1 pc. (30 g)
  • Salt – 1/8 tsp. (1 pinch)
  • Ground cinnamon – 1/2 tsp. (1 g)
  • Ground nutmeg – 1/8 tsp. (1 pinch)
  • Ground ginger – 1/8 tsp. (1 pinch)
  • Liquid honey – 1 tbsp. (22 g)


  • Dried bananas
  • Brown sugar
  • Walnuts
  • Liquid honey

Cooking steps:

  1. Finely chop the dried apricots.
  2. In a medium bowl, add cornmeal, coarsely chopped peanuts, baking powder, cinnamon, ginger, and nutmeg. Add chopped dried apricots, raisins, mix thoroughly.
  3. Place pitted dates in a saucepan, pour in 2/5 cup (100 g) of hot water. Bring to a boil, cook for 5 minutes over medium heat. Drain the liquid from the dates. Collect 1/5 cup (50 g) of the date liquid in one bowl, remove dates in another bowl.
  4. Place dates and bananas in a medium bowl and puree using an immersion blender.
  5. Gradually add the flour mixture with dried fruits to the banana mass, pour in the collected liquid from the dates and liquid honey, mix well.
  6. Place room temperature egg whites in a medium bowl, add salt, and beat with a mixer until fluffy.
  7. Place the beaten egg whites into the date mixture and mix gently.
  8. Place the resulting dough in a pre-greased and floured 17cm x 10 cm loaf tin. Place dried banana and walnuts on top of the dough, sprinkle with brown sugar.
  9. Bake in a preheated oven at 180⁰C (350⁰F) for 1 hour. Leave the cake in the tin for 5 minutes. Remove from tin and let cool completely on a wire rack. Pour liquid honey over the finished cake.
