- Baking soda – 1/2 tsp. (3 g)
- Salt – 1/3 tsp. (2 g)
- Corn starch – 1/3 cup (43 g)
- Canned apricots – 2/3 cans (275 g)
for the icing
- Powdered sugar – 1/2 cup (100 g)
- Milk – 1 1/2 tbsp. (22 g)
Cooking steps:
- Drain liquid from canned apricots, reserving 1/5 cup (50 g). Cut the apricot halves into cubes.
- In a medium bowl, add flour, cornstarch, baking powder, baking soda and salt and stir to combine.
- Place eggs in a large bowl, add sugar, beat with a mixer into a fluffy pale mass.
- Gradually add half of the flour mixture to the egg-sugar mixture, then pour in the milk and the collected liquid from the apricots. Add the remaining half of the flour mixture, mix with a mixer at low speed until smooth. Add chopped apricots to the dough and mix.
Assembly
- Place the resulting dough into a pre-greased and floured 22cm round baking tin.
- Bake in a preheated oven at 180°C (350⁰F) for 35 minutes.
- Leave the finished cake in the tin for 5 minutes. Remove from tin and let cool on a wire rack.
Icing
- Put powdered sugar into a small bowl, pour in milk, mix thoroughly until smooth.
- Pour icing sugar over the cooled cake.
