In a medium bowl, combine the remaining flour, baking powder, and salt. Give it a good stir.

  • Eggs – 1 pc. (50 g)
  • Baking powder – 1 tsp. (5 g)
  • Salt – 1/6 tsp. (1 g)
  • Vanilla sugar – 1 sachet (10 g)
  • Vegetable oil – 1/4 cup (60 g)
  • Frozen raspberries – 1/4 cup (50 g)
  • Coarsely chopped white chocolate – 1/2 bar (45 g)

additionally

  • Whipped cream
  • Frozen raspberries

Cooking steps:

  1. Roll slightly thawed raspberries in 1 tbsp. (9 g) of flour.
  2. Pour the remaining flour, baking powder and salt into a medium bowl and stir.
  3. Place eggs in a large bowl, add sugar and vanilla sugar, beat with a mixer into a fluffy pale mass.
  4. Gradually add half of the flour mixture to the egg-sugar mixture, then pour in the milk, add the remaining half of the flour mixture. Add vegetable oil, mix with a mixer at low speed until smooth. Add coarsely chopped white chocolate and floured raspberries and mix gently.
  5. Grease a 6-pieces muffin tin and sprinkle with flour. Fill 3/4 full with the resulting dough.
  6. Bake in a preheated oven at 180°C (350⁰F) for 25 minutes. Place the cupcakes on a wire rack and let cool completely.
  7. Decorate the finished muffins with whipped cream. Then place raspberries, slightly mashed with a fork, on top of the cream. Serve at room temperature.
